Ingredients

The cookies

  • 1 cup superfine almond flour
  • cup coconut flour
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • cup maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon almond extract
  • to taste powdered sugar (optional)

The strawberry chia jam

  • 1 ½ cups fresh strawberries
  • 2 tablespoons coconut sugar
  • 2 tablespoons chia seeds
  • 2 teaspoons lemon juice

Instructions

  1. Prepare the strawberry chia jam by cooking mashed strawberries in a saucepan over medium-low heat.
  2. Add coconut sugar, chia seeds, and lemon juice to the strawberries and cook for an additional minute.
  3. Remove from heat and let the jam cool to thicken.
  4. In a bowl, whisk together almond flour, coconut flour, cinnamon, baking soda, and salt.
  5. Add maple syrup and melted coconut oil to the dry ingredients, mixing to form a dough.
  6. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  7. Preheat the oven to 350°F.
  8. Roll out the chilled dough between parchment paper to about ¼ inch thick.
  9. Use a linzer cookie cutter to cut out shapes and transfer them to a baking sheet.
  10. Bake the cookies for 9 minutes until slightly golden.
  11. Let the cookies cool for 20 minutes on a wire rack.
  12. Spread about 1 tablespoon of the strawberry jam on half of the cookies and top with the other half.
  13. Sprinkle with powdered sugar if desired.
