Strawberry Chia Linzer Cookies

The strawberry chia jam

Instructions
- Prepare the strawberry chia jam by cooking mashed strawberries in a saucepan over medium-low heat.
- Add coconut sugar, chia seeds, and lemon juice to the strawberries and cook for an additional minute.
- Remove from heat and let the jam cool to thicken.
- In a bowl, whisk together almond flour, coconut flour, cinnamon, baking soda, and salt.
- Add maple syrup and melted coconut oil to the dry ingredients, mixing to form a dough.
- Cover the dough with plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350°F.
- Roll out the chilled dough between parchment paper to about ¼ inch thick.
- Use a linzer cookie cutter to cut out shapes and transfer them to a baking sheet.
- Bake the cookies for 9 minutes until slightly golden.
- Let the cookies cool for 20 minutes on a wire rack.
- Spread about 1 tablespoon of the strawberry jam on half of the cookies and top with the other half.
- Sprinkle with powdered sugar if desired.
