Instructions
- Whisk together the flour, baking powder, and cinnamon in a mixing bowl.
- Cream the butter with sugar in a stand mixer, then mix in the egg and vanilla extract.
- Add almond flour and the flour mixture to the butter mixture and mix until combined.
- Form the dough into two balls, flatten into disks, wrap in plastic wrap, and refrigerate for 1 hour.
- Preheat the oven to 350°F (176°C) and line baking sheets with parchment paper.
- Roll out one disk of dough to 1/8 inch thickness and cut out shapes.
- Use a smaller cutter to cut out the center of half the cookies.
- Transfer the cutouts to the baking sheets and bake for 9 to 12 minutes.
- Let cookies cool, spread raspberry jam on the rounded cookies, top with the star cutouts, and dust with powdered sugar.
