Ingredients

The quinoa

  • 2 cups quinoa

The seasoning

  • 1 tablespoon avocado oil
  • 1 medium onion, diced
  • 1 teaspoon minced garlic
  • 2 ½ cups vegetable broth
  • to taste salt
  • to taste pepper

Instructions

  1. Soak quinoa in water for one hour, then rinse with cool water until the water runs clear.
  2. Turn the Instant Pot to sauté mode and add oil and diced onion, cooking until tender for about 8 minutes.
  3. Add garlic and rinsed quinoa, sauté for an additional 5 minutes while stirring often.
  4. Add vegetable broth, salt, and pepper to the pot, then secure the lid and ensure the valve is closed.
  5. Cook on high pressure for 1 minute.
  6. Allow the pressure to release naturally for about 10 minutes, then carefully remove the lid and fluff the quinoa with a fork.
