Ingredients

The potato rounds

  • lbs Russet Potatoes
  • 5 teaspoons olive oil
  • Coarsely ground to taste sea salt
  • cup 2% shredded cheddar
  • 1-2 scallions (greens only)

The bacon

  • 3 slices uncooked center cut bacon

Instructions

  1. Preheat the oven to 425°F.
  2. Cook the diced bacon in a skillet over medium heat until crisp, then remove and set aside.
  3. Slice the potatoes into ¼-inch thick rounds and coat them with olive oil in a mixing bowl.
  4. Arrange the potato rounds in a single layer on baking sheets and sprinkle with sea salt.
  5. Bake the potatoes for 35-40 minutes until golden.
  6. Remove from the oven and top with shredded cheese and cooked bacon.
  7. Broil for 1-2 minutes until the cheese melts.
  8. Sprinkle with sliced scallions before serving.
