Instructions
- Preheat the oven to 425°F.
- Cook the diced bacon in a skillet over medium heat until crisp, then remove and set aside.
- Slice the potatoes into ¼-inch thick rounds and coat them with olive oil in a mixing bowl.
- Arrange the potato rounds in a single layer on baking sheets and sprinkle with sea salt.
- Bake the potatoes for 35-40 minutes until golden.
- Remove from the oven and top with shredded cheese and cooked bacon.
- Broil for 1-2 minutes until the cheese melts.
- Sprinkle with sliced scallions before serving.
