Twice-Baked Potatoes

Ingredients

The potatoes

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 cup sour cream
  • 1 cup shredded Cheddar cheese
  • ½ cup milk
  • ¼ cup butter
  • 1 bunch scallions
  • 8 slices cooked bacon

Seasoning

  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F and poke holes in each potato.
  2. Rub each potato with olive oil and season with salt and pepper.
  3. Bake the potatoes for 50 to 60 minutes until tender, then cool for 10 minutes.
  4. Slice the potatoes in half and scoop out the flesh into a bowl.
  5. Mash the potato flesh and mix in sour cream, half of the cheese, milk, butter, half of the scallions, salt, and pepper.
  6. Fill the potato skins with the mashed mixture and top with remaining cheese, scallions, and crumbled bacon.
  7. Return the potatoes to the oven and bake for an additional 15 to 20 minutes until heated through.
