Twice-Baked Potatoes

Instructions
- Preheat the oven to 400°F and poke holes in each potato.
- Rub each potato with olive oil and season with salt and pepper.
- Bake the potatoes for 50 to 60 minutes until tender, then cool for 10 minutes.
- Slice the potatoes in half and scoop out the flesh into a bowl.
- Mash the potato flesh and mix in sour cream, half of the cheese, milk, butter, half of the scallions, salt, and pepper.
- Fill the potato skins with the mashed mixture and top with remaining cheese, scallions, and crumbled bacon.
- Return the potatoes to the oven and bake for an additional 15 to 20 minutes until heated through.
