Ingredients

The potatoes

  • 4 pieces russet potatoes

The mix-ins

  • 1 Tbsp olive oil
  • 4 oz bacon
  • 4 Tbsp butter
  • ½ cup sour cream
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 pieces green onions
  • cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F and prepare the potatoes by washing, drying, and pricking them with a fork.
  2. Drizzle olive oil over the potatoes and season with salt, then bake for 50-60 minutes until tender.
  3. Cook the bacon in a skillet until crispy, then chop into smaller pieces once cooled.
  4. After baking, let the potatoes cool slightly, then slice them in half and scoop out the flesh, leaving a thin rim.
  5. In a bowl, mix the scooped potato flesh with butter, sour cream, milk, salt, and pepper until fluffy.
  6. Fold in the chopped bacon, half of the green onions, and ½ cup of cheddar cheese into the potato mixture.
  7. Fill the potato skins with the potato mixture and top with the remaining cheddar cheese.
  8. Bake again for about 20 minutes until heated through and cheese is melted, then garnish with remaining green onions.
