Instructions
- Preheat the oven to 400°F and prepare the potatoes by washing, drying, and pricking them with a fork.
- Drizzle olive oil over the potatoes and season with salt, then bake for 50-60 minutes until tender.
- Cook the bacon in a skillet until crispy, then chop into smaller pieces once cooled.
- After baking, let the potatoes cool slightly, then slice them in half and scoop out the flesh, leaving a thin rim.
- In a bowl, mix the scooped potato flesh with butter, sour cream, milk, salt, and pepper until fluffy.
- Fold in the chopped bacon, half of the green onions, and ½ cup of cheddar cheese into the potato mixture.
- Fill the potato skins with the potato mixture and top with the remaining cheddar cheese.
- Bake again for about 20 minutes until heated through and cheese is melted, then garnish with remaining green onions.
