Twice Baked Potatoes with Blue Cheese, Butter, and Bacon

Instructions
- Bake the potatoes in the oven until tender, about one hour, or microwave them for 3-4 minutes per side.
- Preheat the oven to 250°F if not already on.
- Slice each potato in half lengthwise and scoop out the starchy inner potato into a bowl.
- Mix the scooped potato with butter, blue cheese, and half and half until combined.
- Stir in the chopped bacon and season with salt and pepper.
- Spoon the mixture back into the potato skins and top with additional bacon or blue cheese if desired.
- Bake the stuffed potatoes at 250°F for 15 minutes.
- Garnish with chopped chives and serve hot.
