Twice Baked Potatoes with Blue Cheese, Butter, and Bacon

Ingredients

The Potatoes

  • 2 large russet potatoes

The Filling

  • 4 Tbsp. unsalted butter
  • 4 Tbsp. creamy, crumbled blue cheese
  • ½ cup half and half or heavy cream
  • 4 strips crispy bacon, finely chopped
  • to taste salt
  • to taste pepper
  • for garnish chopped chives

Instructions

  1. Bake the potatoes in the oven until tender, about one hour, or microwave them for 3-4 minutes per side.
  2. Preheat the oven to 250°F if not already on.
  3. Slice each potato in half lengthwise and scoop out the starchy inner potato into a bowl.
  4. Mix the scooped potato with butter, blue cheese, and half and half until combined.
  5. Stir in the chopped bacon and season with salt and pepper.
  6. Spoon the mixture back into the potato skins and top with additional bacon or blue cheese if desired.
  7. Bake the stuffed potatoes at 250°F for 15 minutes.
  8. Garnish with chopped chives and serve hot.
