Instructions
- Preheat the oven to 400°F and prepare the potatoes by scrubbing and piercing them.
- Bake the potatoes for 75-80 minutes until soft, then reduce the oven temperature to 350°F.
- Cut the potatoes in half and scoop out the flesh into a mixing bowl, leaving a small amount in the skins.
- Mash the potato flesh until smooth and mix in half and half, sour cream, butter, salt, and pepper.
- Fill the potato skins with the mixture and top with cheddar cheese.
- In a small bowl, mix paprika, onion powder, garlic powder, and additional salt and pepper, then sprinkle over the potatoes.
- Bake for an additional 10-15 minutes until the cheese melts and the potatoes are heated through, then top with bacon and green onions before serving.
