Ingredients

The potatoes

  • 4 large russet potatoes

The filling

  • ½ cup half and half
  • ½ cup sour cream
  • 4 Tbsp butter
  • to taste salt
  • to taste black pepper
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 6 oz medium cheddar cheese
  • 6 slices bacon (optional)
  • 2 green onions (optional)

Instructions

  1. Preheat the oven to 400°F and prepare the potatoes by scrubbing and piercing them.
  2. Bake the potatoes for 75-80 minutes until soft, then reduce the oven temperature to 350°F.
  3. Cut the potatoes in half and scoop out the flesh into a mixing bowl, leaving a small amount in the skins.
  4. Mash the potato flesh until smooth and mix in half and half, sour cream, butter, salt, and pepper.
  5. Fill the potato skins with the mixture and top with cheddar cheese.
  6. In a small bowl, mix paprika, onion powder, garlic powder, and additional salt and pepper, then sprinkle over the potatoes.
  7. Bake for an additional 10-15 minutes until the cheese melts and the potatoes are heated through, then top with bacon and green onions before serving.
