Ingredients

The potatoes

  • 24 small red potatoes

The filling

  • ¼ cup butter
  • ¼ cup buttermilk
  • ½ cup medium cheddar cheese
  • ¼ cup cooked bacon pieces
  • 2 pieces green onions
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 425°F and bake the potatoes for 30-40 minutes until fork-tender.
  2. Reduce the oven temperature to 375°F and let the potatoes cool.
  3. Slice off the tops of the potatoes and scoop out the insides into a bowl.
  4. Mix the scooped potato with melted butter and buttermilk until smooth.
  5. Stir in cheese, bacon pieces, and green onions, seasoning with salt and pepper.
  6. Spoon the mixture back into the potato skins, mounding slightly on top.
  7. Bake for an additional 8-10 minutes until heated through and cheese is melted.
  8. Garnish with extra cheese and green onion before serving.
