Instructions
- Preheat the oven to 425°F and bake the potatoes for 30-40 minutes until fork-tender.
- Reduce the oven temperature to 375°F and let the potatoes cool.
- Slice off the tops of the potatoes and scoop out the insides into a bowl.
- Mix the scooped potato with melted butter and buttermilk until smooth.
- Stir in cheese, bacon pieces, and green onions, seasoning with salt and pepper.
- Spoon the mixture back into the potato skins, mounding slightly on top.
- Bake for an additional 8-10 minutes until heated through and cheese is melted.
- Garnish with extra cheese and green onion before serving.
