Instructions
- Preheat the oven to 350°F (177°C) and prepare three 9-inch round cake pans.
- Mash the bananas and set aside.
- Whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a mixer, cream the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla, then mix in the mashed bananas.
- Gradually add the dry ingredients alternating with the buttermilk, mixing until just combined.
- Divide the batter among the prepared pans and bake for 22-26 minutes.
- Allow the cakes to cool completely in the pans on a wire rack.
- To make the frosting, brown the butter in a skillet, then refrigerate until solid.
- Beat the solid brown butter until creamy, then add cream cheese and mix until smooth.
- Gradually add confectioners' sugar, vanilla, and salt, mixing until well combined.
- Assemble the cake by layering with frosting between each layer and covering the outside.
- Refrigerate for at least 30 minutes before slicing.
