Instructions
- Preheat the oven to 325°F and prepare two 9-inch round cake pans.
- Whisk together flour, baking soda, and salt in a bowl.
- Mash the bananas with lemon juice.
- In a stand mixer, whip butter, vegetable oil, granulated sugar, and brown sugar until fluffy.
- Add the remaining vegetable oil and blend in eggs one at a time.
- Stir in vanilla and mashed bananas.
- Gradually add the flour mixture and buttermilk, alternating between them.
- Divide the batter into the prepared pans and smooth the tops.
- Bake for 45 to 50 minutes until a toothpick comes out clean.
- Allow the cakes to cool completely before frosting.
- For the frosting, whip heavy cream until stiff peaks form and set aside.
- In the stand mixer, whip cream cheese and butter until smooth, then add powdered sugar and vanilla.
- Fold in the whipped cream and spread over the cooled cakes.
