Ingredients

The cake

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large bananas
  • 1 teaspoon lemon juice
  • ½ cup butter
  • ¼ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon zest

The frosting

  • cups heavy cream
  • 14 ounces cream cheese
  • cup unsalted butter
  • cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325℉ (163℃) and prepare two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Mash the bananas and mix with lemon juice.
  4. In a separate bowl, beat the butter, vegetable oil, granulated sugar, and brown sugar until fluffy.
  5. Add eggs one at a time, then mix in vanilla, lemon zest, and mashed bananas.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk.
  7. Divide the batter between the prepared pans and bake for 45-50 minutes.
  8. Allow the cakes to cool completely before frosting.
  9. For the frosting, whip the heavy cream to stiff peaks.
  10. In another bowl, beat the cream cheese and butter until smooth, then add powdered sugar and vanilla.
  11. Fold the whipped cream into the cream cheese mixture.
  12. Frost the first cake layer, add the second layer, and frost the top and sides.
  13. Decorate with banana slices and nuts if desired.
