Instructions
- Preheat the oven to 325℉ (163℃) and prepare two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- Mash the bananas and mix with lemon juice.
- In a separate bowl, beat the butter, vegetable oil, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, then mix in vanilla, lemon zest, and mashed bananas.
- Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk.
- Divide the batter between the prepared pans and bake for 45-50 minutes.
- Allow the cakes to cool completely before frosting.
- For the frosting, whip the heavy cream to stiff peaks.
- In another bowl, beat the cream cheese and butter until smooth, then add powdered sugar and vanilla.
- Fold the whipped cream into the cream cheese mixture.
- Frost the first cake layer, add the second layer, and frost the top and sides.
- Decorate with banana slices and nuts if desired.
