Ingredients

The cake

  • 2 cups Ripe Bananas (about 4), mashed
  • 2 tsp Fresh Lemon Juice
  • 3 cups All Purpose Flour
  • ¼ tsp Salt
  • 1 ½ tsp Baking Soda
  • ¾ cup Unsalted Butter, softened
  • 2 cups Sugar
  • 3 units Eggs, room temperature
  • 2 ½ tsp Vanilla
  • 1 ½ cups Buttermilk, room temperature

The frosting

  • ½ cup Unsalted Butter, softened
  • 1 8 ounce package Cream cheese, softened
  • 1 ½ tsp Vanilla
  • 3 cups Powdered Sugar

Garnish

  • to taste Chopped Walnuts or Pecans

Instructions

  1. Preheat the oven to 275°F.
  2. Grease and flour a 9 x 13 inch baking dish or two 9 inch round cake pans.
  3. Mash the bananas with lemon juice and set aside.
  4. Mix flour, salt, and baking soda in a medium bowl and set aside.
  5. Cream together butter and sugar until light and fluffy in a large mixing bowl.
  6. Beat in eggs one at a time and stir in vanilla.
  7. Alternately add the flour mixture and buttermilk, starting and ending with the flour.
  8. Stir in the banana mixture.
  9. Pour the batter into the prepared pan(s) and bake for 60-70 minutes, until a toothpick comes out clean.
  10. Remove from the oven and place in the freezer for about 45 minutes to enhance moisture.
  11. For the frosting, cream together butter and cream cheese until smooth.
  12. Mix in vanilla and gradually add powdered sugar, beating until smooth.
  13. Frost the cooled cake and sprinkle with chopped walnuts or pecans.
