Instructions
- Preheat the oven to 275°F.
- Grease and flour a 9 x 13 inch baking dish or two 9 inch round cake pans.
- Mash the bananas with lemon juice and set aside.
- Mix flour, salt, and baking soda in a medium bowl and set aside.
- Cream together butter and sugar until light and fluffy in a large mixing bowl.
- Beat in eggs one at a time and stir in vanilla.
- Alternately add the flour mixture and buttermilk, starting and ending with the flour.
- Stir in the banana mixture.
- Pour the batter into the prepared pan(s) and bake for 60-70 minutes, until a toothpick comes out clean.
- Remove from the oven and place in the freezer for about 45 minutes to enhance moisture.
- For the frosting, cream together butter and cream cheese until smooth.
- Mix in vanilla and gradually add powdered sugar, beating until smooth.
- Frost the cooled cake and sprinkle with chopped walnuts or pecans.
