Ingredients

The cake

  • cup melted coconut oil or vegetable oil
  • ½ cup honey or maple syrup
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2 ½ medium or 2 large bananas)
  • ¼ cup milk of choice or water
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup white whole wheat flour or regular whole wheat flour
  • ¾ cup whole wheat pastry flour or all-purpose flour
  • ½ cup optional mix-ins (chopped walnuts, chocolate chips, etc.)

The frosting

  • 8 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch square baking pan.
  2. In a large bowl, whisk together the oil and honey, then add the eggs and mix well.
  3. Stir in the mashed bananas and milk.
  4. Add the baking powder, baking soda, vanilla, salt, and cinnamon, and mix to combine.
  5. Stir in both flours until just combined, then fold in any optional mix-ins.
  6. Pour the batter into the prepared pan and bake for 30 to 34 minutes until a toothpick comes out clean.
  7. Let the cake cool completely on a rack before frosting.
  8. To make the frosting, beat together the cream cheese and butter until fluffy, then add powdered sugar and vanilla, mixing until smooth.
  9. Spread the frosting over the cooled cake and serve.
