Instructions
- Preheat the oven to 350°F and prepare two 6-inch cake pans with butter, flour, and parchment paper.
- In a small bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a medium bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, vegetable oil, and vanilla extract, mixing until well combined, then add the mashed banana.
- Mix in half of the flour mixture, followed by the buttermilk, and then the remaining flour mixture until just combined.
- Divide the batter between the prepared cake pans and bake for 22-27 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool completely before frosting.
- For the frosting, beat together cream cheese, butter, and vanilla until smooth, then gradually add powdered sugar and beat until creamy.
- If needed, adjust the consistency of the frosting with milk or more powdered sugar.
- Frost the bottom layer of the cake, place the second layer on top, and frost the top and sides of the cake.
- Decorate with chopped walnuts if desired, slice, serve, and enjoy!
