Instructions
- Preheat the oven to 400°F and line a muffin tin with 16 liners.
- In a bowl, combine the wheat bran, white whole wheat flour, baking powder, and baking soda. Stir in the chopped walnuts and shredded coconut.
- In another bowl, blend the unsweetened applesauce, almond milk, honey, coconut oil, vanilla, and beaten eggs.
- Add the wet ingredients to the dry ingredients and stir until just moistened. Gently fold in the blueberries.
- Spoon the mixture into the muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
