Ingredients

  • 1 cup wheat bran
  • cups white whole wheat flour
  • cup sweetened shredded coconut
  • ¼ cup chopped walnuts
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup unsweetened vanilla almond milk
  • ½ cup honey
  • 1 tsp vanilla
  • ¾ cup unsweetened applesauce
  • 2 tbsp coconut oil
  • 2 large eggs, beaten
  • 12 oz blueberries

Instructions

  1. Preheat the oven to 400°F and line a muffin tin with 16 liners.
  2. In a bowl, combine the wheat bran, white whole wheat flour, baking powder, and baking soda. Stir in the chopped walnuts and shredded coconut.
  3. In another bowl, blend the unsweetened applesauce, almond milk, honey, coconut oil, vanilla, and beaten eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just moistened. Gently fold in the blueberries.
  5. Spoon the mixture into the muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
