Ingredients

The batter

The dry ingredients

  • 1 ½ cups wheat or oat bran
  • 1 cup flour (any type)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon coarse salt

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with liners.
  2. In a mixing bowl, whisk together the oil, brown sugar, and honey until fluffy.
  3. Add the eggs and whisk until the mixture is pale and fluffy.
  4. Whisk in the yogurt, milk, and vanilla until well combined.
  5. In a separate bowl, whisk together the wheat bran, flour, baking powder, baking soda, cinnamon, and salt.
  6. Gently mix the dry ingredients into the wet ingredients until just combined.
  7. Use a cookie scoop to fill the muffin liners nearly to the top.
  8. Bake for 17-22 minutes until set, then let cool slightly before removing from the tin.
