Ingredients

  • cups oat bran
  • 1 tablespoon baking powder
  • ¼ cup brown sugar
  • cups milk
  • 2 bananas mashed
  • 2 large egg whites
  • 2 tablespoons agave nectar or honey
  • ¼ cup walnuts, chopped

Instructions

  1. Preheat the oven to 425°F and line a muffin tin with paper cups.
  2. In a large bowl, whisk together the oat bran, baking powder, and brown sugar.
  3. In a separate bowl, mix the milk, mashed bananas, egg whites, and agave nectar.
  4. Combine the wet and dry ingredients and fold in the walnuts.
  5. Divide the batter into the muffin cups and bake for 12 to 15 minutes until lightly browned and a knife comes out clean.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
