Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan.
  2. Toast walnuts on a baking sheet for 8-10 minutes until fragrant, then chop.
  3. Whisk together whole wheat flour, salt, baking powder, baking soda, and cinnamon in a medium bowl.
  4. In a large bowl, mix mashed bananas, honey, yogurt, oil, eggs, and vanilla.
  5. Add the flour mixture to the wet ingredients and stir until just combined.
  6. Gently fold in the wheat bran, walnuts, and any additional mix-ins.
