Banana Nut Bran Muffins

Ingredients

  • cups wheat bran
  • ½ cup unsweetened almond milk
  • 2 medium bananas, mashed
  • 1 large egg
  • 1 Tbsp coconut oil, melted and cooled
  • tsp vanilla
  • ½ cup honey
  • 1 cup whole wheat flour
  • tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • a pinch salt
  • 3 Tbsp chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, soak the wheat bran in the almond milk for about 10 minutes.
  3. In a separate bowl, whisk together the mashed bananas, egg, melted coconut oil, vanilla, and honey.
  4. In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Combine the bran mixture with the banana mixture, then fold in the flour mixture until just combined.
  6. If desired, fold in the chopped walnuts.
  7. Divide the batter into 12 prepared muffin cups.
  8. Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow muffins to cool for about 5 minutes before transferring to a wire rack.
