Banana Nut Bran Muffins

Instructions
- Preheat the oven to 350°F.
- In a medium bowl, soak the wheat bran in the almond milk for about 10 minutes.
- In a separate bowl, whisk together the mashed bananas, egg, melted coconut oil, vanilla, and honey.
- In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine the bran mixture with the banana mixture, then fold in the flour mixture until just combined.
- If desired, fold in the chopped walnuts.
- Divide the batter into 12 prepared muffin cups.
- Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool for about 5 minutes before transferring to a wire rack.
