Ingredients

The peppers

  • 3 pieces red bell peppers

The seasoning and dressing

  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • to taste tablespoons extra virgin olive oil
  • to taste tablespoons aged balsamic vinegar

Instructions

  1. 1. Char the bell peppers directly on a high gas burner, rotating them occasionally.
  2. 2. Once charred, place the peppers in a bowl and cover with plastic wrap for at least an hour to steam.
  3. 3. After steaming, peel the skins off the peppers, remove the tops, seeds, and inner ribs.
  4. 4. Slice the peppers and toss them with salt, pepper, olive oil, and balsamic vinegar to taste.
