Instructions
- Preheat a grill pan or cast-iron skillet over medium heat, or light a gas flame.
- Place the red bell peppers directly over the flame or in the hot pan, turning as they blacken and blister.
- Cook until the peppers are charred on all sides.
- Alternatively, preheat the oven broiler, place the peppers on a foil-lined baking sheet, and broil until blackened and blistered.
- Remove the peppers from the heat and place them in a large bowl, covering it with a towel or plastic wrap.
- Let them steam for 10 minutes to soften.
- Peel off the loose skin, then remove the stems, seeds, and membranes.
- Season with sea salt and use or store in olive oil.
