Ingredients

The peppers

  • 2 whole red bell peppers

The seasoning

  • to taste sea salt
  • enough to cover amount extra-virgin olive oil

Instructions

  1. Preheat a grill pan or cast-iron skillet over medium heat, or light a gas flame.
  2. Place the red bell peppers directly over the flame or in the hot pan, turning as they blacken and blister.
  3. Cook until the peppers are charred on all sides.
  4. Alternatively, preheat the oven broiler, place the peppers on a foil-lined baking sheet, and broil until blackened and blistered.
  5. Remove the peppers from the heat and place them in a large bowl, covering it with a towel or plastic wrap.
  6. Let them steam for 10 minutes to soften.
  7. Peel off the loose skin, then remove the stems, seeds, and membranes.
  8. Season with sea salt and use or store in olive oil.
