Ingredients

The peppers

  • 6 whole red peppers

The oil

  • 1 teaspoon olive oil

Instructions

  1. Coat the outside of each pepper with olive oil.
  2. For the gas burner method, turn the burner on high and place the oiled pepper on top, turning it until all sides are blackened.
  3. Place the blackened pepper in a heat-proof container with a lid for about 15 minutes to trap steam.
  4. Once cooled, peel off the skin, remove the stem and seeds, and slice as desired.
  5. For the broiler method, place oiled peppers on a foil-covered baking sheet and broil, turning until all sides are blackened.
  6. Again, place the blackened peppers in a covered dish to cool, then peel, remove stems and seeds, and slice.
