Ingredients

Dry Ingredients

  • 1 cup gluten-free baking flour
  • cup brown sugar or coconut sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ cup pitted and chopped Medjool dates
  • 2 tablespoons chopped walnuts or sunflower seeds

Wet Ingredients

  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • cup unsweetened almond milk or your favorite plant milk
  • 2 tablespoons coconut oil, melted

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with non-stick spray.
  2. In a large bowl, mix the dry ingredients and then add the chopped dates and walnuts.
  3. In a separate small bowl, whisk together the wet ingredients until smooth.
  4. Combine the wet ingredients with the dry ingredients, adding the melted coconut oil, and stir until a batter forms.
  5. Pour the batter into the prepared loaf pan and bake for about one hour until golden brown.
  6. Allow the bread to cool on a rack before serving.
