Paleo Date Walnut Bread

Ingredients

  • ½ cup blanched almond flour
  • 2 tablespoons coconut flour
  • teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 3 large dates
  • 3 large eggs
  • 1 tablespoon apple cider vinegar
  • ½ cup walnuts, chopped

Instructions

  1. Pulse almond flour and coconut flour in a food processor.
  2. Add salt and baking soda, then pulse to combine.
  3. Pulse in the dates until the mixture resembles coarse sand.
  4. Add eggs and apple cider vinegar, then pulse briefly to combine.
  5. Fold in the chopped walnuts.
  6. Transfer the batter to a mini loaf pan.
  7. Bake at 350°F for 28-32 minutes.
  8. Cool the bread in the pan for 2 hours before removing.
