Paleo Date Walnut Bread

Ingredients

  • ½ cup blanched almond flour
  • 2 tablespoons coconut flour
  • teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 3 large dates
  • 3 large eggs
  • 1 tablespoon apple cider vinegar
  • ½ cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, combine almond flour and coconut flour.
  3. Add salt and baking soda, and pulse to mix.
  4. Pulse in the dates until the mixture resembles coarse sand.
  5. Add the eggs and apple cider vinegar, and pulse until combined.
  6. Briefly pulse in the chopped walnuts.
  7. Transfer the batter to a mini loaf pan.
  8. Bake for 28-32 minutes.
  9. Cool the bread in the pan for 2 hours before removing.
