Simple Veggie Sliders

Ingredients

  • ½ onion red onion (finely diced)
  • 6 pieces button or baby bella mushrooms (diced)
  • 1 pinch salt
  • 1 pinch pepper
  • 1 15-ounce can kidney beans (well rinsed and drained)
  • ¾ cup cooked quinoa
  • 1 Tbsp chili powder (or cumin)
  • ½ cup raw walnuts (crushed or ground into a loose meal)
  • 1 shake vegan Worcestershire or A-1 sauce (optional)

Instructions

  1. 1. Sauté the diced onion in a skillet over medium-low heat with a bit of oil until soft.
  2. 2. Add the diced mushrooms and season with salt and pepper, cooking until browned.
  3. 3. Remove from heat and mash the cooked beans into the mixture, leaving some whole for texture.
  4. 4. Transfer the mixture to a bowl, add quinoa, chili powder or cumin, and stir.
  5. 5. Gradually mix in crushed walnuts until the mixture is thick enough to form patties.
  6. 6. Chill the mixture in the fridge for 10-15 minutes while preheating the oven to 375°F (190°C).
  7. 7. Form the mixture into patties and place on a baking sheet coated with oil.
  8. 8. Bake for 40-45 minutes, flipping halfway through for even cooking.
  9. 9. Optionally, form thinner patties and sauté in a skillet for 3-4 minutes on each side.
  10. 10. Serve on buns or atop greens with desired toppings.
