Ingredients

The base

  • 1 cup cooked brown rice
  • 1 cup raw walnuts
  • 1 ½ cups cooked black beans
  • 1/3 cup panko bread crumbs

The flavorings

  • ½ Tbsp avocado oil
  • ½ medium white onion
  • 1 Tbsp chili powder blend
  • 1 Tbsp cumin powder
  • 1 Tbsp smoked paprika
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 1 Tbsp coconut sugar
  • 3-4 Tbsp vegan BBQ sauce

Instructions

  1. Cook brown rice if not already done.
  2. Toast walnuts in a skillet over medium heat for 5-7 minutes until fragrant.
  3. Sauté diced onion in the same skillet with oil, salt, and pepper until translucent.
  4. Blend cooled walnuts with spices and coconut sugar until fine.
  5. Mash black beans in a bowl, leaving some whole.
  6. Combine mashed beans with cooked rice, walnut mixture, sautéed onion, panko, and BBQ sauce, mixing until a moldable dough forms.
  7. Form the mixture into 5 larger patties or 10 smaller ones.
  8. Heat grill or skillet and brush with oil.
  9. Cook patties for 3-4 minutes on each side until browned.
  10. Serve on buns with desired toppings.
