Instructions
- Preheat the oven to 425°F.
- Trim the leaves off the cauliflower, leaving the stem intact, and slice it into ½-¾ inch thick steaks.
- Brush the cauliflower steaks with olive oil and sprinkle with salt, pepper, and zaatar spice.
- Place the steaks on a parchment-lined sheet pan and roast in the oven for about 20-25 minutes until fork tender.
- While the cauliflower is roasting, prepare the green tahini sauce by blending all ingredients except the tahini paste until combined.
- Add the tahini paste to the blender and blend again until reaching the desired smoothness, adjusting salt and adding water as needed.
- Plate the roasted cauliflower steaks and drizzle with the green tahini sauce before serving.
