Ingredients

The Cauliflower Steaks

  • 1 whole cauliflower
  • 1 tablespoon olive oil
  • 3–4 teaspoons zaatar spice
  • to taste salt
  • to taste pepper

Green Tahini Sauce

  • ½ cup water
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1-2 cloves garlic
  • ¾ cup fresh herbs
  • 2-3 slices jalapeno (optional)
  • ½-1 teaspoon salt
  • ½ cup tahini paste

Instructions

  1. Preheat the oven to 425°F.
  2. Trim the leaves off the cauliflower, leaving the stem intact, and slice it into ½-¾ inch thick steaks.
  3. Brush the cauliflower steaks with olive oil and sprinkle with salt, pepper, and zaatar spice.
  4. Place the steaks on a parchment-lined sheet pan and roast in the oven for about 20-25 minutes until fork tender.
  5. While the cauliflower is roasting, prepare the green tahini sauce by blending all ingredients except the tahini paste until combined.
  6. Add the tahini paste to the blender and blend again until reaching the desired smoothness, adjusting salt and adding water as needed.
  7. Plate the roasted cauliflower steaks and drizzle with the green tahini sauce before serving.
