Hummus, Avocado, & Feta Sandwich

roasted red pepper hummus

crumbled feta cheese

fresh lemon juice

freshly chopped basil

roasted red peppers
Instructions
- Spread hummus on the slices of bread.
- In a bowl, mash avocado and feta cheese together, then mix in lemon juice, basil, salt, and pepper.
- Spread the avocado mixture on top of the hummus, and add roasted red peppers on two slices of bread.
- Top with the other slices of bread to form sandwiches.
- Brush the outside of the bread with olive oil or butter and grill until toasted, about 2-3 minutes per side.
