Hummus, Avocado, & Feta Sandwich

Ingredients

  • 4 slices whole wheat bread
  • ½ cup roasted red pepper hummus
  • 2 ripe avocados
  • ¼ cup crumbled feta cheese
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon freshly chopped basil
  • to taste salt and black pepper
  • ½ cup roasted red peppers

Instructions

  1. Spread hummus on the slices of bread.
  2. In a bowl, mash avocado and feta cheese together, then mix in lemon juice, basil, salt, and pepper.
  3. Spread the avocado mixture on top of the hummus, and add roasted red peppers on two slices of bread.
  4. Top with the other slices of bread to form sandwiches.
  5. Brush the outside of the bread with olive oil or butter and grill until toasted, about 2-3 minutes per side.
