Ingredients

The bread

  • enough for 4 sandwiches Focaccia Bread, ciabatta or french bread/baquettes

The fillings

  • 1 jar roasted red peppers (13-15oz)
  • 1 small container goat cheese
  • 1 jar olive tapenade
  • 3+ cups arugula
  • 1 handful fresh basil

Instructions

  1. Slice the bread lengthwise in halves and spread olive tapenade on both sides generously.
  2. Spread goat cheese liberally on top of the bread over the tapenade.
  3. Drain the roasted red peppers and cut them lengthwise into manageable pieces.
  4. Layer the peppers on the sandwich, then add fresh arugula, basil, and freshly ground pepper.
