Instructions
- Preheat the oven to 350 degrees and toast the ciabatta bread for 5-7 minutes until crispy.
- Slice the bread lengthwise and layer capicola ham on both sides to prevent sogginess.
- Add 2 heaping teaspoons of goat cheese per sandwich.
- Layer the grilled veggies, arugula, fresh herbs, and roasted red peppers on top.
- Drizzle with olive oil and season with salt and pepper.
- Combine the sandwich halves and wrap tightly in parchment paper.
- Slice the sandwiches in half for easier eating and store in a tupperware.
