Capicola Ham, Goat Cheese and Grilled Vegetable Summer Sandwiches

Ingredients

  • 4 loaves ciabatta bread
  • ½ lb capicola ham
  • 5 oz goat cheese
  • 1 fennel grilled vegetable
  • 1 squash grilled vegetable
  • 1 zucchini grilled vegetable
  • 1 bunch fresh herbs (basil and oregano)
  • 1 cup arugula
  • 1 cup roasted red pepper
  • to taste salt
  • to taste pepper
  • as needed for drizzling olive oil

Instructions

  1. Preheat the oven to 350 degrees and toast the ciabatta bread for 5-7 minutes until crispy.
  2. Slice the bread lengthwise and layer capicola ham on both sides to prevent sogginess.
  3. Add 2 heaping teaspoons of goat cheese per sandwich.
  4. Layer the grilled veggies, arugula, fresh herbs, and roasted red peppers on top.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Combine the sandwich halves and wrap tightly in parchment paper.
  7. Slice the sandwiches in half for easier eating and store in a tupperware.
