Simple Greek Avocado Sandwich

Ingredients

  • 2 slices soft whole wheat bread
  • ½ avocado
  • 1 tablespoon basil pesto
  • 1 piece roasted red bell pepper (jarred is fine)
  • 1 cucumber sliced into thin rounds
  • 1 slice thinly sliced red onion
  • 6 pieces pitted kalamata olives, thinly sliced
  • 1 handful spring mix
  • to taste balsamic reduction or regular balsamic vinegar

Instructions

  1. Mash the avocado and spread it on one slice of bread.
  2. Spread a layer of pesto on the other slice of bread.
  3. Layer roasted red bell pepper on top of the avocado.
  4. Add cucumber slices, red onion, olives, and spring mix on top.
  5. Drizzle balsamic reduction over the spring mix.
  6. Top with the pesto slice, pesto side down.
