Ingredients

The yogurt spread

  • 1 tablespoon Greek Yogurt
  • 1 clove garlic, minced
  • a pinch chipotle chile powder or cayenne
  • ¼ teaspoon sea salt

The sandwich

  • 2 slices bread
  • 2 slices tomatoes
  • ¼ avocado
  • 2 large eggs

Instructions

  1. 1. Spray a small skillet with olive oil and heat to medium low. Cook the eggs as desired.
  2. 2. In a small bowl, combine Greek yogurt, garlic, chipotle chile powder, and sea salt.
  3. 3. Toast the bread as desired. Spread yogurt on one slice and mash avocado on the other.
  4. 4. Top the yogurt slice with the eggs and then add the tomato. Place the avocado slice on top of the tomato.
  5. 5. Cut in half and serve immediately.
