Ingredients

Garlic-Serrano Spread

  • 5 medium cloves garlic
  • 1 egg egg
  • ΒΌ teaspoon fine grain sea salt
  • 1 teaspoon Dijon-style mustard
  • 1-2 tablespoons freshly squeezed lemon juice
  • 1 cup extra-virgin olive oil
  • 1 medium serrano pepper

Frittata Sandwich

  • 1 loaf focaccia
  • 1 ripe avocado
  • 1 cup roasted cherry tomatoes
  • thin slices of good cheddar cheese
  • as needed cups lettuces
  • 1 square sheet pan frittata

Instructions

  1. Make the garlic-serrano spread by blending garlic, egg, salt, mustard, lemon juice, olive oil, and serrano pepper until smooth.
  2. Toast the bread slices horizontally.
  3. Spread the garlic aioli on both sides of the toasted bread.
  4. Smash avocado on one side and place roasted tomatoes and cheddar on the other.
  5. Add lettuce leaves and a square of sheet pan frittata to the sandwich.
  6. Close the sandwich and wrap it tightly in parchment or waxed paper.
  7. Refrigerate until ready to eat.
