Instructions
- Make the garlic-serrano spread by blending garlic, egg, salt, mustard, lemon juice, olive oil, and serrano pepper until smooth.
- Toast the bread slices horizontally.
- Spread the garlic aioli on both sides of the toasted bread.
- Smash avocado on one side and place roasted tomatoes and cheddar on the other.
- Add lettuce leaves and a square of sheet pan frittata to the sandwich.
- Close the sandwich and wrap it tightly in parchment or waxed paper.
- Refrigerate until ready to eat.
