Salmon with Creamy Garlic Dijon Sauce

The sauce

garlic, minced

heavy cream

Dijon mustard

low-sodium chicken broth

minced fresh dill
Instructions
- Heat a large non-stick skillet over medium-high heat.
- Add olive oil to the skillet and season the salmon with salt and pepper.
- Place the salmon in the skillet and sear for about 4 minutes until golden brown, then flip and cook for another 2-3 minutes.
- In a measuring cup, whisk together cornstarch with 1 Tbsp of cream, then add enough cream to make ½ cup.
- Whisk in Dijon mustard and honey.
- Remove the salmon and tent with foil to keep warm, leaving the oil in the skillet.
- Add garlic to the skillet and sauté until golden brown.
- Pour in the chicken broth and bring to a simmer, reducing heat to medium-low until reduced by about 2/3.
- Whisk the cream mixture again and pour into the skillet, stirring and simmering for about 30 seconds.
- Remove from heat, stir in dill, return salmon to the pan, and spoon sauce over the salmon before serving.
