Salmon with Creamy Garlic Dijon Sauce

Ingredients

The salmon

  • 4 pieces skinless salmon fillets (6 - 7 oz each)
  • 3 tsp olive oil
  • to taste salt
  • to taste freshly ground black pepper

The sauce

  • 3 cloves garlic, minced
  • ½ tsp cornstarch
  • ½ cup heavy cream
  • Tbsp Dijon mustard
  • ½ tsp honey
  • ½ cup low-sodium chicken broth
  • 1 Tbsp minced fresh dill

Instructions

  1. Heat a large non-stick skillet over medium-high heat.
  2. Add olive oil to the skillet and season the salmon with salt and pepper.
  3. Place the salmon in the skillet and sear for about 4 minutes until golden brown, then flip and cook for another 2-3 minutes.
  4. In a measuring cup, whisk together cornstarch with 1 Tbsp of cream, then add enough cream to make ½ cup.
  5. Whisk in Dijon mustard and honey.
  6. Remove the salmon and tent with foil to keep warm, leaving the oil in the skillet.
  7. Add garlic to the skillet and sauté until golden brown.
  8. Pour in the chicken broth and bring to a simmer, reducing heat to medium-low until reduced by about 2/3.
  9. Whisk the cream mixture again and pour into the skillet, stirring and simmering for about 30 seconds.
  10. Remove from heat, stir in dill, return salmon to the pan, and spoon sauce over the salmon before serving.
