Baked Dijon Salmon

The marinade

whole-grain or Dijon mustard

fresh herbs (dill, parsley, or chives)
Instructions
- Preheat the oven to 375°F.
- Mix olive oil, mustard, garlic, salt, pepper, and half of the herbs in a small bowl.
- Lay the salmon skin side down on an oiled, parchment-lined baking sheet.
- Generously coat the salmon with the mustard mixture using a brush or the back of a spoon.
- Bake the salmon until the internal temperature at the thickest part reaches 125-130°F, then remove from heat.
- For a crispy top, broil for 1-2 minutes.
- Garnish with remaining fresh herbs and a squeeze of lemon juice, if desired.
