Baked Dijon Salmon

Ingredients

The salmon

  • 1 lb Salmon (whole filet or 4 pieces)

The marinade

  • 2 tablespoon extra virgin olive oil
  • 3 tablespoon whole-grain or Dijon mustard
  • 1 clove garlic (finely minced)
  • ¼ teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  • ¼ cup fresh herbs (dill, parsley, or chives)

Instructions

  1. Preheat the oven to 375°F.
  2. Mix olive oil, mustard, garlic, salt, pepper, and half of the herbs in a small bowl.
  3. Lay the salmon skin side down on an oiled, parchment-lined baking sheet.
  4. Generously coat the salmon with the mustard mixture using a brush or the back of a spoon.
  5. Bake the salmon until the internal temperature at the thickest part reaches 125-130°F, then remove from heat.
  6. For a crispy top, broil for 1-2 minutes.
  7. Garnish with remaining fresh herbs and a squeeze of lemon juice, if desired.
