Baked Lemon Dill Salmon

Ingredients

The salmon

  • 4 6-oz salmon fillets
  • 2 Tbsp extra virgin olive oil
  • tsp lemon zest
  • 2 Tbsp fresh lemon juice
  • to taste salt
  • to taste freshly ground black pepper

The creamy dill sauce

  • cup fat free plain Greek yogurt
  • 3 Tbsp mayonnaise
  • 1 clove garlic, finely minced
  • 1 Tbsp chopped fresh dill
  • 2-3 tsp milk
  • ½ tsp honey
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Whisk together olive oil, lemon zest, and lemon juice in a bowl.
  3. Grease a 13 by 9-inch baking dish and place the salmon fillets inside.
  4. Season the salmon with salt and pepper, drizzle with the lemon mixture, and rub it over the salmon.
  5. Let the salmon rest at room temperature for 10 minutes.
  6. Bake in the preheated oven for 12-16 minutes until cooked through.
  7. For the sauce, mix Greek yogurt, mayonnaise, garlic, dill, honey, and enough milk to reach the desired consistency in a bowl.
  8. Season the sauce with salt and pepper to taste.
  9. Serve the salmon warm topped with the creamy dill sauce.
