Ingredients

The main ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breasts, cut into pieces
  • 1 medium red bell pepper, diced
  • 1 package ALEXIA Cauliflower Risotto
  • 1 head broccoli, cut into florets
  • ½ cup water
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

For garnish

  • to taste Parmesan cheese
  • to taste parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until browned, about 8 minutes.
  3. Stir in the diced red bell pepper and cook for an additional 3 minutes.
  4. Reduce the heat to medium and add the cauliflower risotto, broccoli florets, water, sea salt, and black pepper.
  5. Cover the skillet and cook for 8 minutes.
