Ingredients

The vegetables

  • ½ pound cauliflower, grated
  • 4 ounces broccoli, chopped
  • 1 clove garlic, minced
  • 3 ounces onion, minced

The cooking essentials

  • 2-3 tablespoons water
  • ¼ teaspoon garlic salt or regular salt
  • 2 tablespoons butter or ghee or olive oil
  • 2 tablespoons Parmesan cheese (optional)
  • 1-2 teaspoons lemon zest
  • to taste pepper

Instructions

  1. Remove the core from the cauliflower and chop or grate it.
  2. Place the cauliflower in a medium microwavable bowl.
  3. Wash and chop the broccoli, then add it to the bowl with the cauliflower.
  4. Add 2-3 tablespoons of water to the bowl and cover it tightly with plastic wrap.
  5. Microwave the bowl on high for two minutes, adjusting the time as necessary.
  6. Carefully drain the water from the bowl while holding it with an oven mitt.
  7. Remove the plastic wrap and stir the mixture.
  8. Add butter (or ghee or oil) and other ingredients, stirring well and tasting for seasoning.
  9. Alternatively, sauté the garlic and onion in butter until translucent, then add the broccoli cauliflower rice and finish with lemon zest, Parmesan cheese, and seasonings.
