Broccoli Cauliflower Rice

Instructions
- Remove the core from the cauliflower and chop or grate it.
- Place the cauliflower in a medium microwavable bowl.
- Wash and chop the broccoli, then add it to the bowl with the cauliflower.
- Add 2-3 tablespoons of water to the bowl and cover it tightly with plastic wrap.
- Microwave the bowl on high for two minutes, adjusting the time as necessary.
- Carefully drain the water from the bowl while holding it with an oven mitt.
- Remove the plastic wrap and stir the mixture.
- Add butter (or ghee or oil) and other ingredients, stirring well and tasting for seasoning.
- Alternatively, sauté the garlic and onion in butter until translucent, then add the broccoli cauliflower rice and finish with lemon zest, Parmesan cheese, and seasonings.
