Fiona’s Phenomenal Fish Packets

white fish fillets (skinless & boneless), about ¾-inch thick

Instructions
- Prepare the green marinade by blending all marinade ingredients until smooth, reserving ¼ cup for the recipe.
- Preheat the oven to 450°F.
- Spiralize or julienne the zucchini and carrots, then toss them with a little salt.
- Cut 4 large sheets of parchment paper into heart shapes and lay them flat.
- On one side of each heart, spread ¼ of the seasoned veggies.
- Place a fish fillet on top of the veggies, add a tablespoon of green sauce, squeeze half a lime, and drizzle with ½ tablespoon of olive oil.
- Fold the parchment over the fish and crimp the edges tightly to seal each packet.
- Place the packets on a baking sheet and bake for 7-10 minutes until the fish is cooked through.
- Cut open the packets carefully to avoid steam, and garnish with cherry tomatoes and cilantro if desired.
