Ingredients

  • 4 tablespoons butter
  • ¾ cup onion, diced
  • 2 teaspoons garlic, minced
  • ¼ cup all-purpose flour
  • 3 cups milk
  • teaspoons kosher salt
  • ½ teaspoon black pepper
  • 3 cups shredded cheddar cheese, divided
  • 3 pounds Russet potatoes, thinly sliced
  • 2 cups ham, diced
  • 2 tablespoons chopped fresh parsley
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 400°F and coat a baking dish with cooking spray.
  2. Melt butter in a pan over medium heat, add onions and cook until softened.
  3. Add garlic and cook for an additional 30 seconds.
  4. Stir in flour and cook for 1 minute, then gradually whisk in milk.
  5. Add salt and pepper, bring the sauce to a simmer and cook until thickened.
  6. Remove from heat and stir in 1 cup of cheese.
  7. Layer half of the potatoes in the baking dish, followed by half of the ham and half of the sauce, then sprinkle with 1 cup of cheese.
  8. Repeat the layering with the remaining ingredients.
  9. Cover the dish with foil and bake for 50 minutes.
  10. Uncover and bake for an additional 20 minutes until the top is browned and potatoes are tender.
  11. Let stand for 5-7 minutes, sprinkle with parsley, and serve.
