Scalloped Potatoes and Ham

Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Melt butter in a pan over medium heat, add onions and cook until softened.
- Add garlic and cook for an additional 30 seconds.
- Stir in flour and cook for 1 minute, then gradually whisk in milk.
- Add salt and pepper, bring the sauce to a simmer and cook until thickened.
- Remove from heat and stir in 1 cup of cheese.
- Layer half of the potatoes in the baking dish, followed by half of the ham and half of the sauce, then sprinkle with 1 cup of cheese.
- Repeat the layering with the remaining ingredients.
- Cover the dish with foil and bake for 50 minutes.
- Uncover and bake for an additional 20 minutes until the top is browned and potatoes are tender.
- Let stand for 5-7 minutes, sprinkle with parsley, and serve.
