Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 tbsp flour
  • 2 cups uncooked elbow macaroni
  • 1.5 cups milk
  • 8 oz sharp white cheddar cheese, cubed or shredded

Toppings

  • to taste crumbled bacon
  • to taste green onions
  • to taste extra shredded cheese

Instructions

  1. Heat olive oil in a large pot over medium heat and cook ground turkey until no longer pink, about 10 minutes.
  2. Add onion, garlic, carrots, and celery; sauté for 5-6 minutes.
  3. Stir in chicken broth, Worcestershire sauce, salt, and pepper; bring to a boil then reduce to a simmer.
  4. In a small bowl, combine ~¾ cup hot broth with flour and whisk until smooth; add to the soup slowly while stirring.
  5. Add macaroni and simmer until al dente, about 10 minutes.
  6. Slowly stir in milk, then add cheese gradually, stirring until melted.
