Ingredients

The base

  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 1 lb raw 99% lean ground turkey breast
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 ½ teaspoons ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 14.5 oz can diced tomatoes, do not drain
  • 1 8 oz can tomato sauce
  • 1 15 oz can red kidney beans, drained and rinsed
  • 3 cups reduced sodium chicken broth
  • 8 oz dry wheat macaroni or small pasta shells

The cheese

  • 4 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. Heat olive oil in a large pot over medium-high heat and add chopped onion.
  2. Stir in ground turkey and cook until browned, breaking it into small pieces.
  3. Add minced garlic and cook for another minute.
  4. Stir in chili powder, cumin, salt, and cayenne until well combined.
  5. Add diced tomatoes, tomato sauce, kidney beans, chicken broth, and dry pasta; stir to combine.
  6. Bring to a simmer, then cover and reduce heat to low, cooking for 12-13 minutes until pasta is tender.
  7. Uncover, stir, and simmer for an additional 3-4 minutes to thicken the sauce.
  8. Sprinkle cheese on top, cover, and cook on low for 2 minutes until melted.
  9. Stir everything together before serving.
