The cheese

Instructions
- Heat olive oil in a large pot over medium-high heat and add chopped onion.
- Stir in ground turkey and cook until browned, breaking it into small pieces.
- Add minced garlic and cook for another minute.
- Stir in chili powder, cumin, salt, and cayenne until well combined.
- Add diced tomatoes, tomato sauce, kidney beans, chicken broth, and dry pasta; stir to combine.
- Bring to a simmer, then cover and reduce heat to low, cooking for 12-13 minutes until pasta is tender.
- Uncover, stir, and simmer for an additional 3-4 minutes to thicken the sauce.
- Sprinkle cheese on top, cover, and cook on low for 2 minutes until melted.
- Stir everything together before serving.
