Ingredients

The base

  • 1 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • ½ lb. ground beef
  • 2 Tbsp all-purpose flour
  • 2 Tbsp chili powder

The liquids

  • 1 15 oz. can tomato sauce
  • 1 15 oz. can diced tomatoes
  • 1 15 oz. can black beans
  • 1 15 oz. can kidney beans
  • 2 cups beef broth

The additions

  • 1 cup frozen corn kernels
  • 2 cups uncooked elbow macaroni
  • 1 cup shredded cheese

Instructions

  1. Dice the onion and mince the garlic, then cook them in olive oil until soft.
  2. Add ground beef and cook until browned, draining excess fat if necessary.
  3. Stir in flour and chili powder, cooking for a couple of minutes.
  4. Drain and rinse the black and kidney beans, then add them along with tomato sauce, diced tomatoes, and corn to the pot.
  5. Add dry macaroni and beef broth, stir to combine, and bring to a boil.
  6. Once boiling, reduce heat and simmer for about 15 minutes, stirring occasionally.
  7. When pasta is cooked, turn off the heat and mix in the cheese until melted.
