One Pot Cheesy Taco Pasta

Instructions
- 1. Boil water in a large pot and cook the pasta according to package directions. Drain and set aside.
- 2. In a large skillet or Dutch oven, heat oil over medium heat.
- 3. Sauté the onion for 3-4 minutes until slightly soft.
- 4. Add the ground beef and cook for 7-8 minutes until browned, breaking it up while cooking.
- 5. Stir in garlic, chili powder, cumin, smoked paprika, salt, and black pepper, and sauté for 30-60 seconds until fragrant.
- 6. Add black beans, tomatoes, stock, and evaporated milk to the pot and bring to a simmer.
- 7. Remove from heat and stir in cheddar cheese until melted.
- 8. Add the cooked pasta and cilantro, stirring to combine. Adjust seasoning if necessary.
- 9. Serve in bowls topped with avocado, sour cream, and crushed tortilla chips.
