Cheesy Taco Pasta

Ingredients

The pasta

  • 8 oz wheat pasta

The meat

  • 1 lb 95% lean ground beef

The seasoning

  • 1 oz reduced sodium taco seasoning

The sauce

  • 1 ½ cups chunky salsa
  • ½ cup water

The cream and cheese

  • ¼ cup fat free sour cream
  • ¾ cup shredded 2% reduced fat cheddar cheese
  • ¾ cup shredded sharp cheddar cheese

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Cook the pasta according to the package instructions.
  2. While the pasta is cooking, brown the ground beef in a large sauté pan over medium-high heat, breaking it up as it cooks.
  3. Once the beef is cooked, drain any excess grease from the pan.
  4. Add the taco seasoning, salsa, and water to the beef, then reduce the heat to a simmer and cook for 5 minutes.
  5. Once the pasta is cooked, drain it and add it to the beef mixture.
  6. Stir in the sour cream, both types of cheese, salt, and pepper until well combined and the cheese melts.
  7. Remove from heat and serve immediately.
