Ingredients

The pasta

  • 8 ounces rotini pasta or other short pasta

The meat mixture

  • 1 pound ground beef (90% lean)
  • ½ cup minced onion
  • 1 14 ounce can petite diced tomatoes (drained)
  • 3 tablespoons taco seasoning

The sauce

  • 2 ounces cream cheese
  • ¾ cup sour cream
  • 1 cup shredded cheddar cheese

The toppings

  • ½ cup diced Roma tomatoes
  • 2 tablespoons chopped cilantro
  • optional additional taco toppings (tortilla strips, olives, avocado, jalapenos)

The cooking oil

  • 1 teaspoon vegetable oil

Instructions

  1. Cook the pasta in salted water according to package directions and reserve ¼ cup of the cooking water.
  2. In a large pan, heat the oil over medium-high heat and add the ground beef, breaking it up with a spatula.
  3. Add the minced onion and cook until the meat is browned and the onion is tender.
  4. Stir in the diced tomatoes and taco seasoning.
  5. Add the cooked pasta to the pan and reduce the heat to low.
  6. Incorporate the cream cheese, sour cream, and cheddar cheese, stirring until melted.
  7. If needed, add reserved pasta water to thin the sauce to desired consistency.
  8. Serve topped with diced Roma tomatoes, chopped cilantro, and any additional toppings.
