Ingredients

The salad

  • 8 oz rotini pasta
  • 1 pound ground beef or turkey
  • ½ cup diced onions
  • 15.5 oz canned diced chilies and tomatoes
  • 1 cup grated cheese
  • ½ cup sour cream or plain Greek yogurt
  • ¼-½ cup ranch salad dressing
  • shredded to taste lettuce
  • to taste tortilla strips or crushed chips

The seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper
  • 1 teaspoon red cayenne pepper (optional)

Instructions

  1. Cook the pasta according to package instructions.
  2. Rinse the pasta in cold water and dry completely.
  3. In the same pot or a skillet, heat medium-high and add diced onions.
  4. Cook onions for 2-3 minutes until fragrant, then add ground beef.
  5. Cook the beef until fully cooked and no longer pink, then drain excess fat.
  6. Add spices and diced tomatoes and chilies to the beef, stirring to combine.
  7. In a large serving bowl, mix sour cream and ranch dressing.
  8. Add cooked pasta, ground beef mixture, and grated cheese to the bowl and stir to combine.
  9. Taste and adjust spices, salt, and pepper as needed.
  10. Top with lettuce, tortilla strips, and any additional toppings.
