Instructions
- Cook the pasta according to package instructions.
- Rinse the pasta in cold water and dry completely.
- In the same pot or a skillet, heat medium-high and add diced onions.
- Cook onions for 2-3 minutes until fragrant, then add ground beef.
- Cook the beef until fully cooked and no longer pink, then drain excess fat.
- Add spices and diced tomatoes and chilies to the beef, stirring to combine.
- In a large serving bowl, mix sour cream and ranch dressing.
- Add cooked pasta, ground beef mixture, and grated cheese to the bowl and stir to combine.
- Taste and adjust spices, salt, and pepper as needed.
- Top with lettuce, tortilla strips, and any additional toppings.
