Ingredients

Taco Meat

  • 1 lb ground turkey
  • ½ tablespoon olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon chipotle powder
  • ¼ teaspoon chili powder
  • 2 teaspoons Frank’s hot sauce

Pasta Salad

  • 12 oz uncooked pasta
  • 15 oz black beans, drained and rinsed
  • 3 oz sliced black olives
  • 1 pint cherry tomatoes, halved
  • ½ medium red onion, diced
  • 12 oz frozen corn
  • ½ cup chopped fresh cilantro

Dressing

  • 2 cups Creamy Cilantro Lime Dressing

Optional Toppings

  • to taste Avocado
  • to taste Salsa
  • to taste Queso Fresco

Instructions

  1. 1. Boil a large pot of water and cook the pasta until al dente, then strain and set aside.
  2. 2. Heat olive oil in a skillet over medium-high heat, add ground turkey and spices, and cook until fully cooked.
  3. 3. In a large bowl, combine cooked noodles, turkey, and remaining salad ingredients.
  4. 4. Pour the dressing over the salad and toss to coat all ingredients.
  5. 5. Refrigerate to cool before serving.
  6. 6. Serve chilled and add optional toppings as desired.
